Chef Kyle and Katina Connaughton are proud to unveil Usu-Zan by SingleThread, presented by Chase Sapphire, inspired by their many years of living in Hokkaido. The limited 10 day engagement will take place from 1/20/22-1/30/22 in the alpine climes of Park City.
Hosted by The Lodge at Blue Sky, which encompasses 3,500 acres, the Lodge is a retreat in itself, and magnificiently captures our shared values of being inspired and invigorated by our natural surroundings.
The 7-course dinner culimates with the "main event" which is a special donabe hot pot that is shared among your party and sold with beverage pairings. Cooked in handmade donabes from the Nagatani Family of Iga, Japan, this will be a choice of a Hokkaido King Crab Miso Seafood Hot Pot, an A-5 Wagyu Shabu-Shabu Hot Pot, a Roasted Duclair Duck Hot Pot, or a Shojin Style Vegetarian Hot Pot. Each booking will be sold with wine pairings. Beverage pairings will feature Dom Pérignon Champagne with some of the best producers from Sonoma and from around the world. The dining experience will conclude with our after dinner dessert and whisky lounge.
Bookings are available through Tock and will be released on December 16th at 9am PST. Only 25 tables are available per evening with seatings starting at 5:00pm. Dinner bookings are $800/pp or $900/pp including a thoughtful wine pairing put together for this special engagement. Exclusive of gratuity and taxes. Proof of vaccination required.

NEW PRE-PAID DEPOSIT SYSTEM AND 6-COURSE CHEF'S TASTING MENU OPTION
As we navigate the rapid changes of the past few months, we have changed a few things in regard to bookings for the restaurant. We understand that the Covid-19 pandemic has heightened the need for more flexibility in our hospitality policies, not only in our physical space but in our ticketing process as well. That said, we have moved to a non-refundable deposit based system in lieu of a full pre-payment in advance. A transfer of your deposit will remain available via your Tock profile should you not be able to arrive for your confirmed reservation. Additionally, we have created a 6-course Chef's Tasting Menu in addition to our classic 11-Course Tasting Menu for those who would prefer a shorter experience.

Enjoy the SingleThread Rooftop Garden
The rooftop will be open for wine, sake, beer, and non-alcoholic beverages for dinner guests, up to 45 minutes prior to their reservation. We ask that that guests allow 20-30 minutes of time to enjoy the rooftop gardens. (weather permitting)

Kistler Vineyards Presents: SingleThread Autumn 2020 Wine Dinner Series at Trenton Roadhouse
Partnering with our dear friends at Kistler Vineyards, we are proud to offer the SingleThread Autumn Dinner Series served completely outdoors amongst the vineyards at Kistler's Trenton Roadhouse.
Available through the end of November 2020, beginning at 3pm Thursday - Sunday early evenings, the Kistler - SingleThread Dining Experience will include a 10-course menu paired with their single clone heritage wines.
Kistler has always been a leader in the viticulture world producing some of our favorite wines from the region from exceptional vineyards throughout Sonoma County. They are farmers first and foremost and share our passion for sustainable agricultural techniques and letting the land and ingredients speak first.
Please join us for a beautiful evening of food and wine at the iconic Trenton Roadhouse. This dinner series will serve in part as a fundraiser to support the incredible work of Sonoma Family Meal and Community Foundation Sonoma County COVID-19 Resilience Fund.
